dry dosa

Thavala Dosa Recipe

Ingredients
To prepare the dry maavu
Raw rice - 3 cups
Urad dal - 1 cup
Chana dal - 1/2 cup
Tuvar dal - 1/4 cup
Methi seeds - 1/4 tsp
Black pepper - 1 tsp
Jeera - 1/2 tsp

Grind everything to coarse powder. Do not add water. This can be made ahead of time and stored in fridge.

On the day of making dosa, measure the maavu in a bowl. To this add warm water (kai porukkum soodu) and salt. Add just enough water to bring it to a wet sand consistency (pesarina padam). Keep aside for atleast 2 hrs (more time makes the dosa very soft).

Before making dosa, season with mustard seeds, cumin seeds, ginger, green chillies (can also add curd chillies), curry leaves. Add little buttermilk and water and mix to adai maavu consistency.

Spread like uthappam. Add oil. Cover and cook on one side in medium flame. Then turn over and cook on the other side (open).
